First of all, HAPPY NEW YEAR! It’s been two weeks since my last article as I’ve taken some time off and needed to use the holidays to recharge and find mental and physical energy to take on the new year and be creative again. I left last year feeling tired and drained and this year is also not gonna be an easy one as a lot changes professionally and privately are on the horizon, but I do feel ready for it and while it’s gonna be tough, it’s also exciting! I’ve never been afraid of change and was always quick to move on if something doesn’t work out. Some things stick more than others though and the longer you hold on to something, the harder it is to let go of. This year will be a lot about letting these sticky things go and hopefully by the end of it, feel much much lighter than this year.
One of the messages I always get is people asking why my dough is not sticky and my hands and bowl always clean. I also often get messages full of panic that their dough is very sticky in the beginning and mixing it is a mess or even worse, no matter how long they handmix it doesn’t come together. Or the dough felt stable at some point but got sticky again later in the process.
Let’s look at those cases a bit more closely.
